Thank you so much for an amazing experience, Claudette! I left Mérida feeling as if I'd just returned from a vacation with a bunch of girlfriends as opposed to on a generic tour. I loved the cultural immersion. Other visits to Mexico have been like going to the 51st United State, but on this tour, I knew I was in Mexico and not on a generic tour bus. You put so much thought into every single move we made during the trip--not only in the activities themselves, but down to the minutest details, like serving us horchata during Spanish class the day after we mentioned it in passing. I can't wait to take another trip. The question is, which one?

The culinary tour with MexicaChica was fantastic. Fun and casual but well structured. I love to cook and I can't wait to try some of the dishes on my own at home.
Chef Brent is a great teacher and very knowledgeable about the history of the cuisine and the individual ingredients. The introduction to each recipe provided us with a lot of in depth information on the cultural and regional cuisines, the balance of flavors, and how food should be bought, stored, and handled for the best possible results. The best part was eating all the incredible food at the end!

This class was not only about cooking, it was about history and tradition of Mexican food. Chef Brent is passionate about food and his knowledge is encyclopaedic. He throws valuable information in, about why things are done the ways that they're done, while he is moving around putting his magic touch on everything. He is humorous, quick-witted, well-organized and a great chef. I myself learned a lot of basic cooking methods I will use, like blackening vegetables before using them. This was my first cooking class. I loved it. The other participants were lively and interested and the time flew. It was amazing what a variety of dishes we produced in a few hours. The class was set up beautifully, in a lovely, warm kitchen. All the raw ingredients were photogenically gorgeous, and I learned to use things like tamarindo, masa, and achiote that I'd always admired from afar.

Chef Brent was brilliant! I learned so much and had the most fantastic time preparing and eating amazing food during my culinary tour with MexicaChica.
